Chicken Tacos

Ingredients:
- 1 can cooked chicken
- 14 oz can diced tomatoes (or chop-chop some)
- 1 red bell pepper diced
- 1/2 onion diced
- 2 cloves garlic diced
- 1 bunch cilantro diced
- 1 package taco seasoning
- 1 sm can corn, drained
- 8-10 corn tortillas
- Shredded cheese
- Sour cream
- other toppings like diced avocado, lettuce, etc
Directions:
Saute onion, bell pepper, garlic. Add chicken, corn, tomatoes, cilantro, taco seasoning. Simmer for about 15-20 minutes.
In a skillet add a thin layer of oil. Fry tortillas, folding in half, for crunchy tacos. Fill tortillas with cooked filling add cheese, and other toppings.
